He is also the founder of Sustainable Seafood Ireland (SSI), now a non-profit, focused on marine conservation, education, and advocacy. Through Salty Buoy, The Urban Monger, and Lambay Island Crab, we are building a seafood industry that prioritises quality, sustainability, and transparency.
